A scientifically mineralized sugar. It is used for balancing the mineral salts content of dairy products such as Half and Half, Cottage Cheese, Buttermilk, Chocolate Milk, Ice Cream Mix, etc.
It is superior as A.-C. has an extremely high pH, always runs uniform in quality, and is very gentle in its action of blending with milk proteins. These same minerals in their raw state would not produce the same results any more so than raw lime mixed with milk without the addition of sugar and water in the form of Viscogen.
A.-C. is generally superior to Viscogen because two minerals normally present in milk are utilized: magnesium oxide and calcium oxide. The product of sugar treated with these minerals is A.-C. (calcinated sugar).
A.-C. is sold in large volume at low prices. Economical to use.
